cornbread cupcakes

If you’re anything like me you’re always looking for something new too cook!  So weekly I search the Internet for new recipes to try and came across this one that I MUST try!  Cornbread cupcakes with mashed potatoes and chicken topped with gravy!

It’s fall and this sounds like the perfect comfort food!  Try it out & let me know what you think!

Cornbread Recipe:

Ingredients

1 cup of flour

1 cup of corn meal

1 cup of sugar

1 stick of melted butter

2 tablespoons of baking powder

2 eggs

1 pinch of salt

Milk, enough to make the mixture a little thinner than pancake batter.

Just combine all the ingredients, except the milk, in a bowl. Then stir in the milk, a little at a time. It’s about consistency here and you’re looking for a mixture that’s a little thinner than pancake batter. Be careful, you can always add to it – but you can’t take away. Pour into muffin cups and bake at 375 for about 15 minutes or until they’re golden brown. Serve with Orange Blossom Honey Butter.

For the orange blossom honey butter, just mix a softened stick of butter together with a pinch of salt, 2 tablespoons of heavy cream, and 2 tablespoons of orange blossom honey butter. I use a hand mixer and whip it on high until it’s nice and creamy and fluffy!

 

Mashed Potatoes Recipe:

Ingredients

2 pounds of Russet potatoes, peeled, boiled, and drained

1 stick of butter

1-1 1/2 cups of half and half

1 1/2 teaspoons of Kosher salt

1 teaspoon of fresh cracked pepper

1 cup of really good shredded white cheddar

2 tablespoons of chopped chives

**You’ll need a stand mixer or a hand mixer to get the potatoes whipped enough.

 

1. Take the drained potatoes and place in a mixing bowl.

2. Add butter, salt, cracked pepper, cheddar cheese, and chives. Then turn the mixer on low to get all of the ingredients mixed.

3. Finally, as the potatoes are being whipped, stream in the half and half until a nice light and fluffy consistency has been achieved. Remember, add a little at a time because you can always add more if you need to you. If you add too much, you can’t remove it.

4. Serve warm!

 

Spicy Fried Chicken Recipe:

2 pounds of chicken, cleaned and patted dry

2 teaspoons of kosher salt

2 teaspoons of ground black pepper

2 teaspoons of garlic powder

1 teaspoon of onion powder

2 teaspoons of chili powder

1 teaspoon of cayenne

1/4 cup of good hot sauce

2 teaspoons of brown sugar

Equal parts flour and cornstarch for the dredge

Cooking oil

Directions

1. Combine all ingredients except the flour mixture and cooking oil. Massage the seasonings on the chicken and let the chicken stand at room temperature for about 20 minutes while the oil gets hot.

2. Dredge the chicken well being sure to shake off the excess flour mixture.

3. When the oil is ready, fry until the chicken is golden brown.

That’s it. Enjoy!!!
